In March of this year, The Stage Shoreditch welcomed a bold new addition to its dining scene with Sushi Revolution, following the success of its Brixton site. This modern twist on a traditional Japanese Izakaya was founded by industry veterans Tom Blackshaw and Aidan Bryan, who bring a combined 40 years of expertise to the concept. Locals have quickly embraced the inviting atmosphere, creative cocktails and delicious food.
Sushi Revolution’s new space in The Stage Plaza overlooks the upcoming Museum of Shakespeare, due to open in 2025. The interior blends traditional Japanese elements with modern design, featuring shou sugi ban walls, hand-crafted kintsugi tables and a reclaimed wood sushi bar. Seating is available for 34 indoors, with additional outdoor seating offering views of Japanese plants and trees.
Chef Tom Blackshaw has honed his craft at top sushi restaurants like Aqua Kyoto and Sticks n Sushi, combining traditional techniques with modern flavours. His partner, Aidan Bryan, oversees the front of house and drinks menu, bringing his extensive experience from acclaimed venues like Claridge’s and Maze Grill. Tom and Aidan are focused on perfecting their Shoreditch location. As Tom puts it, “We aim to serve great food and drinks, quickly, in a great venue, with great service at a great price.”
The menu is designed for versatility and creativity. Start with snacks like Spicy Edamame or the signature Revolution Miso Soup. Diners can enjoy classic sushi dishes alongside inventive options like Tuna Tartare with goat’s cheese and Chicken Karaage Nanban with yuzu kosho mayo. Vegans are well catered for with standout dishes like Fried Japanese Aubergine and Cucumber Tataki.
For a group, the Dragon Maki Platter offers a colourful mix of rolls, while Sashimi and Nigiri are made fresh from top seafood suppliers. Desserts include the decadent Revolution Miso Brownie Bites.
The drink menu features everything from Traunstein Helles Lager to a variety of sakes, starting at £8 for a carafe. There’s also a list of quick-to-serve cocktails, including the popular Hanami Highball and Ichiban Iced Tea.
